236 – Endive Salad Recipe / سلطة الهندباء

Ingredients :

  • 2 endives
  • 1/4 cup of cheese cut into cubes (e.g. gruyere, havarti, etc.)
  • 1 small apple
  • 1/2 cup of walnut halves
  • 1 vinaigrette portion – around 1/4 cup (check Alia’s Tips: Homemade Vinaigrette)

Directions :

Step 1: Preparing the Ingredients
1- To properly cut an endive, you want to first chop the bottom of the endive. Then chop 1 inch of the top, where the green leaves are, because that’s where the bitterness resides.
2- Slice the endive lenghtwise and remove a couple of outside leaves.
3- Using a pairing knife, cut a V-shape to remove the core of each of the endive halves. The core is the white portion in the center of the endive that is white and hard.
3- Some people use the endive halves and fill them with other ingredients. For this recipe, we are going to chop the endives.
4- To bring a soft texture to the salad to balance the crunchiness of the endives we are going to add cheese (example: havarti, gruyere, etc.). Cube the cheese.
5- Cut and cube the apples. You can peel it or just keep the skin for an extra touch of color.

Step 2: Mixing the Ingredients
1- Place all the chopped ingredients in a large bowl.
2- Add the walnut halves to the rest of the ingredients. Walnuts work so well with endives.
3- Add one portion of the vinaigrette (around 1/4 cup) – check my video on how to make homemade vinaigrette! Mix well.
4- The salad is ready! because the salad is pale, use a colorful plate to present it!
