  • Hotdogs (vegetarian, beef, turkey, etc.) – precooked when purchased in the package
  • 1 egg + a little bit of water

Overview
Ramadan is here and Moroccan tables become a feast! Today I am going to show you how to make a “chhiwa” (a very tasty little thing) that is very easy to make. You can serve it as an appetizer or with Moroccan tea. It’s tasty, cute, and only takes 3 ingredients to make it!

Step 1: Ingredients
1- For the 3 ingredients, we will need: puff pastry. Personally, I do not like to make puff pastry at home. I find it complicated to make and the quality of puff pastry you find in the frozen section is really good. Don’t waste your time, just buy the frozen puff pastry.
We will need an egg to brush the puff pastry to give it a beautiful golden color.
Then you need hotdogs – any kind you like (beef, turkey, vegetarian, etc.). Just make sure that they are pre-cooked and only need a little bit of cooking (unlike sausage that is raw).
Step 2: Rolling the Puffs
1- Roll the puff pastry to get a medium thickness square of puff pastry.
2- Mix the egg with a little bit of water, and brush the surface of the puff pastry with the egg wash. If you want to get creative, you can brush the surface of the pastry with mustard or hot sauce. You can even sprinkle spices like cumin, paprika, etc.
3- Line the hot dogs on the edge of the puff pastry (the edge closest to you).
4- Roll the pastry over the hot dogs. Shape it with your hands so that the edges of the puff pastry stick together. You will end up with a roll of dough with the hot dogs inside.
5- Using a cookie cutter or sharp knife, cut the roll from the rest of the dough. Make sure that the roll of dough is well combined and covers the hot dogs.
6- Continue rolling the rest of the hotdogs in the puff pastry.
7- Brush the rolls with the egg wash. We do this for 2 reasons: 1) glue the edges of the pastry 2) give a beautiful color to the pastry once it is baked.
Step 3: Baking the Puffs
1- Preheat your oven to 385 F / 195 C.
2- Usking a sharp knife, cutt the rolls into small pieces (bite size).
3- Place the hot dog bites in a baking pan covered with parchment paper. Decorate with seeds: chia seeds, cumin seeds, black sesames, etc.
4- Place the puffs in the freezer for 5 minutes before baking them.
Serve immediately. Bon Appetit!
