463- Pumpkin Apple Pear Soup / شوربة القرع والتفاح والإجاص
- 500g pumpkin, cut in chunks
- 1 large apple
- 1 large pea
- 1 small onion
- 2 garlic cloves
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 2 tablespoon olive oil
- 850ml water
- 1 small chicken cube
- Salt and pepper, to taste
1- Cut the pumpkin in half, remove the seeds, and peel the skin. Chop the pumpkin meat into cubes.
2- Peel the apple and pear. Cut in chunks.
3- Grate the garlic cloves.
4- On medium heat, drizzle the olive oil in a deep pot, on medium heat. Once the oil is hot, add the onion and garlic. Cook for 3 minutes until the onion becomes translucent.
5- Add the pumpkin chunks, apple and pear.
6- Add the spices: ground cinnamon, ground ginger, salt, and pepper.
7- Mix and continue cooking for another 5 minutes.
8- Add the water to the pot and crush the chicken cube into it. Cover the pot, increase the heat to medium-high, and cook for 20 minutes or until the pumpkin becomes soft.
9- Drain the pumpkin, apple, and pear from the water and place in a food processor. Add a little bit of the cookin water and mix until you get a smooth mixture. Adjust the texture of the soup by adding more cooking water.
10- Reheat the mixed soup and add salt and pepper to your taste. Serve immediately.
