500- Barley Tomato Soup / حساء الطماطم بالشعير
250 grams (1 1/4 cups) barley
2 tablespoon olive oil
1 small onion, grated
2 small tomatoes, grated and skin discarded
2 tablespoons finely chopped parsley
2 tablespoons finely chopped cilantro
1/4 teaspoon ground turmeric
Salt and pepper, to taste
1 tablespoon tomato paste
700 ml (3 cups) water
1- In a large pot, combine the olive oil, onion, tomatoes, parsley, cilantro, turmeric, salt, and pepper.
2- Mix the ingredients and cook over medium heat, for around 5 minutes or until the onion becomes soft.
3- Add the water.
4- Add the barley and tomato paste.
5- Mix all the ingredients, cover the pot, and bring the mixture to a boil.
6- Then lower the heat and allow the soup to simmer gently for around 50 minutes, while stirring frequently, until the barley becomes tender and the mixture thickens.
