533- Homemade Almond Paste / عجينة اللوز

Almond paste is an essential ingredient in Moroccan sweets. Not only it is hard to find fresh almond paste ready to use but also it is not cheap. The good news is that it is really simple to prepare at home and it tastes much better than the store-bought one. In this recipe we are making homemade almond paste from raw unsalted almonds that we blanched in the previous recipe. This is hands down the best almond paste you will ever had!


300 grams (11 oz) blanched almonds
134 grams (2/3 cup) white granulated sugar
28 grams (2 tablespoons) butter, softened
1 teaspoon orange blossom water
A few pebbles of Gum Arabic (Meska), optional


1- First, prepare the gum Arabic (or Meska). Add a pinch of sugar to a few Meska pebbles and crush them with the bottom of a cup until you get a fine powder.

2- In a food processor, combine the blanched almonds, sugar, softened butter, Meska powder, and orange blossom water.

3- Mix for 5 minutes until you get a smooth paste.

4- Wrap the almond paste in a plastic wrap and place it in an airtight container. Refrigerate for up to 1 month or freeze for a couple of months.
