533- Homemade Almond Paste / عجينة اللوز

Ingredients :

300 grams (11 oz) blanched almonds
134 grams (2/3 cup) white granulated sugar
28 grams (2 tablespoons) butter, softened
1 teaspoon orange blossom water
A few pebbles of Gum Arabic (Meska), optional

Directions :

1- First, prepare the gum Arabic (or Meska). Add a pinch of sugar to a few Meska pebbles and crush them with the bottom of a cup until you get a fine powder.

2- In a food processor, combine the blanched almonds, sugar, softened butter, Meska powder, and orange blossom water.

3- Mix for 5 minutes until you get a smooth paste.

4- Wrap the almond paste in a plastic wrap and place it in an airtight container. Refrigerate for up to 1 month or freeze for a couple of months.
