563- Bassboussa – Gluten Free / البسبوسة خالية من الغلوتين
For the Bassboussa:
100 grams (1/2 cup) yogurt
120 ml (2/3 cup) vegetable oil
100 grams (1/2 cup) white granulated sugar
50 grams (2/3 cup) grated coconut
200 grams (1 cup) corn semolina
100 grams (3/4 cup) corn flour
1 tbsp vanilla sugar
1 tbsp baking powder (Free Gluten)
For the syrup:
100 ml water
150 ml orange juice
200 grams sugar
Step 1: Making the basboussa
1- Preheat your oven to 180 °C / 360 °F. In a large bowl, add the eggs, yogurt, and oil and mix until all ingredients are well combined.
2- Add the dry ingredients: grated coconut, corn semolina, corn flour, vanilla sugar, baking powder (Free Gluten), and mix.
3- Butter a cake pan and sprinkle corn flour on the surface.
4- Pour the dough into the pan evenly and with a sharp knife, cut it into diamond shaped pieces.
5- Place an almond in the center of each piece, then bake for about 30 minutes or until the cake is golden. In the meantime, prepare the syrup.
Step 2: Making the syrup
6- In a saucepan, add water, sugar, and orange juice. Place the saucepan on medium heat and bring the syrup to a boiling point. Reduce the heat to low and cook for 10 minutes.
7- Once the bassboussa is done, pour the warm syrup all over it. Let it rest for 30 minutes before serving.
