575- Carrot Salad / سلطة الجزر


3 large carrots (350 grams / 0.7 pound)
A small bunch of fresh cilantro
2 garlic cloves
2 tablespoons olive oil
Juice of 1/2 lemon
1/2 teaspoon ground paprika
1/2 teaspoon ground cumin
1/4 teaspoon chili powder, to taste
Salt and pepper, to taste


1- Peel the carrots and cut them into 0.5 cm / 0.2 inches thick slices.

2- In a large pot over medium heat, boil water. Place the carrot slices in the pot with 1/2
teaspoon of salt and cook for 15 to 20 minutes until tender. Drain the carrots.

3- Finely chop the cilantro and garlic.

4- Heat olive oil in a medium pan over low heat. Add the garlic and cook for 2 minutes while stirring regularly.

5- Now add the lemon juice, ground paprika, ground cumin, chili powder, salt, and pepper.

6- Add chopped cilantro and mix well.

7- Add the carrot slices, toss with the spices, and cook for another 5 minutes on low heat.

8- Serve either warm or cold with crusty bread.
