633- Quinoa Fritters / فطائر الكينوا

Ingredients

50 grams (1/4 cup) quinoa
1/2 medium carrot, grated using the medium holes of a grater
1/2 medium zucchini, grated using the medium holes of a grater
1 garlic clove, chopped
A small bunch of parsley
1 tablespoon cornstarch
Salt and pepper, to taste
3 tablespoons olive oil

Directions

1- In a saucepan over medium heat, place the quinoa and cover generously with water. Bring to a boil, add the salt and reduce the heat, cover the saucepan and cook for 10 minutes.
2- Turn off the heat and keep the quinoa aside (still in the cooking water).
3- In a saucepan over medium heat, heat 2 tablespoons olive oil. Add the carrots, zucchini, garlic and a pinch of salt and pepper. Cook 5 minutes until the vegetables are tender.

4- Strain the quinoa, place it in a bowl, and add the cooked vegetables, cornstarch, parsley and 1 tablespoon of olive oil.


5- Mix well and shape the mix into small patties of 5 centimeter (2 inches) in diametre.


6- Heat a nonstick pan over medium heat, add the patties and cook for a few minutes on each side until they become deep golden brown. Be gentle when turning the patties.


7- Serve the quinoa fritters hot.
