Ingredients :

For the salad:
1/2 tomato
1/4 red bell pepper
1/4 green bell pepper
290 grams (1 1/2 cup) cooked whole grain rice
140 grams (5 oz) tuna, canned in water
65 grams (2.3 oz) canned corn
30 grams (1/4 cup) mozzarella cheese cut into small cubes
3 black olives cut into small pieces
1/2 tablespoon parsley, finely chopped

For the dressing:
2 tablespoons olive oil
1 teaspoons dijon mustard
1 tablespoon fromage blanc
Juice of 1/2 lemon
Salt and pepper, to taste

Directions :

1- Remove the bell peppers seeds then cut into small pieces. Cut the half of tomato into small pieces as well.
2- In a large bowl, mix together all the ingredients of the salad. Make sure to drain water from tuna before use.
3- To make the dressing, mix all the dressing ingredients together and season to taste (salt and pepper).
4- Incorporate the dressing into the salad mixture. Mix well.
5- Serve the salad cold.
