
642- Indian Tomato Soup

Ingredients :
3 Kiri cheese portions
6 large tomatoes, quartered
1 medium onion, quartered
2 garlic cloves, chopped
1 teaspoon freshly grated ginger
3 bay leaves
3 cloves
2 star anise
1 cinnamon stick
3 cardamom cloves
1 teaspoon salt, to taste
1/4 teaspoon pepper, to taste
1/2 teaspoon sugar
1 liter (4 cups) water
Directions :
1– In a large saucepan over medium heat, place the tomatoes, onion, garlic, ginger, bay leaves, cloves, star anise, cinnamon stick, salt and pepper. Crush the cardamom cloves and add them to the pan.
2- Mix and cover with water, bring to a boil and cook for about 20 minutes until the tomatoes and the onion become tender.
3- Remove the bay leaves, cloves, star anise, cinnamon stick and cardamom cloves.
4- Drain the tomatoes and onion and keep the cooking water, place them in a bowl, add the portions of Kiri cheese and sugar and mix with a blender until you get a smooth texture.
5- Add the cooking water little by little while mixing to obtain the desired consistency.
6- Put back in the saucepan, bring to a boil for 2 minutes and serve immediately.
