658- Cream of Chicken Soup / شوربة دجاج بالخضار


200 grams chicken breast, cut into small cubes
1 medium onion, finely chopped
1 carrot, cut into small cubes
1 celery stick, cut into small cubes
1/2 red pepper, cut into small cubes
2 garlic cloves, chopped
100 grams peas
50 grams all-purposed flour
3 tablespoons olive oil
2 tablespoons chopped parsley
30 grams butter
1/2 teaspoon salt, to taste
1 teaspoon pepper, to taste
1 teaspoon fresh thyme
750 ml vegetable broth
500 ml milk



1- In a large saucepan over medium heat, heat the olive oil and butter until melted. Add the onion, garlic, salt, and pepper and cook for 3 minutes, stirring regularly with a wooden spatula (spoon).
2- Add the chicken pieces, carrots, pepper, and celery and cook for 3 minutes while stirring.
3- Add the flour and thyme and mix.
4- Cover with the broth, bring to a boil then cover the pan and cook for 10 minutes.
5- Add the peas, mix, and cover the pan and cook for another 10 minutes.
6- Add the milk and parsley and cook for 5 minutes. Serve hot!
