665- Morocan Caramelized Pumpkin Salad / سلطة القرع المعسل آلمغربية
500 grams pumpkin, cut into cubes
100 grams butter
5 tablespoons white granulated sugar
4 tablespoons honey
2 teaspoons ground cinnamon
1 teaspoon ginger powder
1 teaspoon salt, to taste
Some saffron pistils
2 teaspoons of orange blossom water
100 grams walnuts
1- In a large pan over medium heat, melt the butter. Add the pumpkin cubes and cook for 30 minutes while crushing with a fork until you have a puree texture.
2- Add the sugar, honey, cinnamon, ginger, salt and saffron pistils and continue cooking for about 10 to 15 minutes, stirring regularly with a wooden spoon until the mixture reduces and thickens.
3- Finally add the orange blossom water. Sprinkling with nuts before serving. Serve hot
