723- Peanuts Sesame Ghriba / غريبة بالفول السودانى و السمسم
This Ghriba is made with roasted peanuts and sesame seeds. Since it contains flour, it is less soft and chewy then the Mlouza, which is solely made of almond paste. Also while Mlouza is a festive cookie given that its ingredients are more expensive, this Peanut Sesame Ghriba is often available in Moroccan homes as a regular snack. The soft crunchy texture of this Ghriba and its roasted nutty flavor pair up wonderfully with hot tea and coffee.
200 grams (1 1/2 cups) all-purpose white flour
250 grams (4.5 oz) peanuts, without skin
100 grams (3.5 oz) sesame seeds
175 grams (3/4 cup) butter, softened
125 grams (1/2 cup and 2 Tbsp) white granulated sugar
5 grams (1 teaspoon) baking powder
A pinch of salt
1- Preheat your oven to 180°C (350°F). Place the peanuts on a baking pan covered with parchment paper and bake them for 10 minutes until they get a nice golden color.
2- On medium heat, roast the sesame seeds on a pan for around 3 minutes while stirring constantly.
3- Place the peanuts in a food processor, and mix them until you get a fine powder. Place in a separate bowl.
4- Now mix the sesame seeds in the food processor until you get a fine powder.
5- Place the softened butter and sugar in a large bowl.
6- Mix the butter and sugar using a spatula until you get a smooth mixture.
7- Add the ground peanuts and ground sesame seeds.
8- Mix the nuts with the butter and sugar until smooth.
9- Sift the flour and add it along with the baking powder to the butter nut dough.
10- Mix all the ingredients until well incorporated.
11- Preheat your oven to 180°C (350°F). Shape the dough into balls the size of a walnut and place them in a baking pan covered with parchment paper.
12- Bake for about 15 minutes or until the cookies have a light golden color. Let the cookies cool completely before handling (or serving) as they are soft and can break easily.
