753- Pear Pomgrenare Salad / سلطة الاجاص والرمان
For the vinaigrette:
1/2 cup (120 ml) olive oil
1/4 cup (60 ml) white vinegar
2 tablespoons sesame oil
1 tablespoon honey
1 tablespoon Dijon mustard
Salt and pepper to taste
For the salad:
7 oz (200 grams)fresh spring mix
3.5 oz (100 grams) baby spinach
1 cup (100 grams) pomegranate seeds
1 sliced pear
2 oz (50 grams) grated parmesan
1 cup (100 grams) roasted unsalted almonds
Preparing the vinaigrette:
1- Using a blender, mix together the olive oil, sesame oil, and white vinegar for 1 minute until the mixture becomes whitish.
2- Add the honey, Dijon mustard, salt, and pepper. Mix well until the vinaigrette is well combined.
3- Pour the vinaigrette in a jar, close it, and place it in the fridge for 30 minutes so that all the flavors are well combined.
note: You can store the vinaigrette in the fridge for up to 3 days.
Preparing the salad:
4- In a large bowl, mix together all the ingredients of the salad: spring mix, baby spinach, pomegranate seeds, pear slices, Parmesan, and almonds.
5- Add some of the vinaigrette to the salad and mix well until well combined. Serve the salad immediately!
