Ingredients :

1 pack rigatoni Panzani
2 tablespoons olive oil
500 grams mixed raw seafood (white fish, shrimp, and calamari)
4 leeks, sliced
2 garlic cloves, minced
1 teaspoon lemon juice
Black pepper, to taste
Salt, to taste

White Sauce:
3 tablespoons corn starch
3 cups milk
a pinch of nutmeg

Topping:
Cheese (Edam)

Directions :

1- Preheat oven to 180C/350F.
2- Bring a medium pan of salted water to boil, place the rigatoni and cook for 8 minutes or until it’s cooked.
3- Heat the olive oil in a skillet over high heat. Add the leeks and cook for 1 minute. Add the fish, salt and pepper and cook. Turn off the heat, add the lemon juice and mix.
4- In a (28.2cm x18.2cm) baking dish, mix pasta, seafood and leeks together
5- In a small bowl, mix the corn starch with a little milk.
6-In a sauce pan, add the milk, the cornstarch and mix. Cook, while whisking constantly as it thickens, for around 5 minutes or until the sauce is thick enough to coat the back of a wooden spoon.
Season with nutmeg, salt and pepper.
7- Pour the milk cream over the pasta. Top with cheese.
8- Bake for 20 – 25 minutes, or until the top is golden.
