795- Coconut and Raspberry Energy Balls / كرات الطاقة بجوز الهند والتوت
12 medjool dates, pitted
70 grams (2.5 oz) peanut butter
40 grams (1.4 oz) dried finely shredded coconut
50 grams (1.7 oz) almond powder
1 tablespoon honey
9 Frozen raspberries
4 tablespoons dried finely shredded coconut for decoration
1- In a food processor add the medjool dates, shredded coconut, almond powder, and mix until the ingredients are nicely crushed.
2- Add peanut butter, honey, and mix again until the mixture becomes a bit sticky. The mixture may look crumbly, but it should hold together once formed into balls.
3- Place the mixture in a medium bowl and gently mix with a spatula until well combined.
4- Using a tablespoon, take some of the dough mixture and roll it into balls walnut size.
5- Before forming the balls completely, make a small hole in the middle of the dough and add 1 frozen raspberry, cover it and finish forming the balls.
6- Put the shredded coconut into a bowl and start rolling the energy balls into it one at a time until fully covered.
7- Place the coconut and raspberry energy balls in the refrigerator for 1 hour before serving.
8- You can put the coconut and raspberry energy balls in an airtight container, and store them in the fridge for up to 4 days, or for a month in the freezer.
