130 grams (4.7 oz) butter, at room temperature
80 grams (1/2 cup) granulated sugar
1 pinch of salt
1 tablespoon vanilla sugar
60 grams (1/3 cup) ground sesame seeds
200 grams (1 1/2 cups) all-purpose white flour
100 grams (1/2 cup) sesame seeds
60 grams (1/3 cup) apricot jam
1- In a large bowl, add the butter, sugar, vanilla sugar, salt, and beat with an electric egg beater until the texture becomes creamy.
2- Add the ground sesame seeds to the butter mixture and continue beating for 1 minute until well combined.
3- Add the flour and continue mixing using your hand until an homogeneous and smooth cookie paste is formed.
4- Start shaping the cookie dough into small balls the size of walnuts.
5- Roll the cookies into the sesame seeds one at a time until fully covered.
6- Place the sesame cookies in a baking sheet covered with parchment paper, and press the center of them using your finger to form small holes.
7- Bake the sesame cookies in a preheated oven at 180°C (356°F) for minutes, or until they turn golden.
8- Remove the cookies from the oven and allow to cool completely. The cookies will become crunchy.
9- Using a small spoon, fill the sesame cookies center with apricot jam and serve.
