826- Spicy Persimmon Pomegranate Salad / سلطة حارة بالكاكي والرمان
1 large ripe persimmon
100 grams (1 cup) pomegranate seeds
1 small white onion, finely chopped
1/2 cucumber, peeled and cut into medium cubes
2 tablespoons finely chopped fresh parsley
2 tablespoons fresh lemon juice
1 teaspoon grated fresh ginger
1/4 teaspoon chilli flakes
Salt and Pepper, to taste
3 tablespoons toasted hazelnuts, chopped
1- On a cutting board, peel the persimmon and cut it into medium cubes.
2- In a large bowl, add the persimmon cubes, pomegranate seeds, onion, cucumber, and mix all together until well combined.
3- To make the dressing, in a small bowl, add the lemon juice, fresh ginger, chilli flakes, salt and pepper. Mix all together until well combined.
4- Pour the sauce over the persimmon salad and gently mix with a spatula until completely coated. Top with toasted hazelnuts and serve immediately.
