832- Chocolate With Preserved Lemon Ganache / شوكولاتة مع غاناش الليمون المصير
100 grams (3.5 oz.) dark chocolate (70%)
100 grams (3.5 oz.) dark chocolate ganache at room temperature
Skin of half a lemon confit in salt
Step 1: Prepare the ganache
1- Prepare a dark chocolate ganache.
2- Remove the pulp of the preserved lemon (it will not be used in this recipe) and cut the skin into small pieces.
3- Add the preserved lemon pieces to the ganache and mix.
Step 3: Prepare the chocolates
1- Melt the chocolate in a double boiler.
2- Pour a little chocolate in the bottom of the molds with a pastry bag. Reserve in the refrigerator to harden it.
3- Place the preserved lemon ganache in the center of each shell, without touching the sides.
4- Cover with melted dark chocolate.
5- Reserve in the refrigerator to harden it, then unmold.
