850- Chia Seeds Pudding with Fruits / بودينج بذور الشيا بالفواكه
For the chia pudding:
60 grams (1/2 cup) chia seeds
375 milliliters (1 1/2 cup) oat milk
1 pinch of salt
1 teaspoon vanilla extract
1 tablespoon honey
1/2 ripe mango, peeled
3 tablespoons orange juice
150 grams (5.2 oz) fresh raspberries
For the decoration:
1/2 ripe mango, cut into medium cubes
1 tablespoon dried chia seeds
Fresh basil leaves
1- In a medium bowl, whisk together the chia seeds, oat milk, honey, vanilla extract, and a pinch of salt.
2- Place the mixture in a container, cover, and let the mixture rest for 2 hours in the fridge to thicken. You can add additional milk to thin out the consistency if desired.
3- Add the mango and orange juice to a blender and mix until smooth. Set the puree aside.
4- In a small bowl, add the raspberries and slightly smash them with a fork. Set aside.
5- In 4 serving jars, layer the mango puree, and the mashed raspberries alternatively with the chia pudding.
6- Garnish with fresh raspberries, mango cubes, and basil leaves.
