937- Amlou and Goat Cheese Salad / سلطة أملو وجبن الماعز

Ingredients :

For the goat cheese
4 goat cheese rounds about 1 in (2.5cm) thick
1 teaspoon dried thyme

For the salad
5 Oz (150g) mixed greens (arugula, spinach…)
2 green apples, julienned
4 figs, cut into 4 pieces (replace with pears or peaches)
50g walnuts, roughly chopped

For the Amlou dressing
1/3 cup (80g) Amlou
1/2 cup (100ml) Argan oil
1 tablespoon mustard
2 tablespoons lemon juice
1 teaspoon dried thyme
1 tablespoon honey
Salt and pepper to taste

Directions :

Step 1: Preparing the goat cheese
1- Preheat the oven’s broiler to 356°F/180°C.
2- Place the goat cheese slices on top of a parchment paper-lined baking sheet. Sprinkle the cheese with thyme, then broil in the oven for 3 minutes until the top is golden brown.

Step 2: Preparing the Amlou dressing
3- Place the salad dressing ingredients in a jar. Place the lid on top of the jar securely, then shake until everything is well combined.

Step 3: Preparing the salad
4- Divide the mixed greens among your serving plates. Add the apples, figs, and walnuts.
6- Add one slice of warm goat cheese to each plate. Drizzle the salad with the Amlou dressing, making sure to generously coat the goat cheese, then enjoy!
