Alia’s Tips: Homemade Garam Masala recipe / نصائح عليا لعمل جارام ماسالا بالبيت

Garam masala is a magic spice blend, which is key in many Indian recipes. Garam means “hot / spicy” and Masala means “mixture of spices” and there are so many variation of this recipe.


  • 2 tablespoons coriander seeds (10 grams)
  • 3 whole cloves
  • 1 small cinnamon stick
  • 1 star anise
  • 6 green cardamom pods
  • 1/2 teaspoon whole peppercorn (2.5 grams)
  • 1 bay leaf
  • 1 mace
  • 3/4 tablespoons ground ginger (5 grams)
  • 1 tablespoon ground cumin (5 grams)


Step 1 – Heating the Spices: 
1- First, let’s heat the spices to get the aromas flowing. 
In a skillet, combine the coriander seeds, peppercorns, mace, star anise, cinnamon stick, green cardamom pods, cloves, and bay leaf. Roast over medium-low heat for about 2 minutes. Keep stirring so that the spices don’t burn…
2- Remove the whole spices and now heat up the ground spices: ground ginger and ground cumin. Roast for around 30 seconds. 

Step 2 – Mixing the Spices: 
1- Grind the whole spices in a coffee grinder or spice mill to a fine powder.
2- Sift the spice mixture, then add the ground cumin and ground ginger.
3- Mix and that’s it! Garam Masala it is! Use immediately or store in a sealed jar for up to 1 month.
