Facebook Live (08/25/2016): No-bake chocolate cheesecake / شيزكيك بالشوكولا
On Thursday, August 25th I did another Facebook Live Cooking Class. This time we made no-bake chocolate cheesecake!!! If you missed it, here is the link to the video and written recipe. Enjoy!!!
For the Crust:
– 14 cocoa cookies and cream (Oreo, etc.)
– 30 grams (2 tablespoons) butter
For the Cheesecake Filling
– 340 grams (12 oz) cream cheese (remove from fridge 30 minutes before starting)
– 85 grams (3 oz) powdered sugar
– 50 ml (¼ cup) heavy cream
– ½ teaspoon vanilla extract
– 130 grams (4.5 oz) dark chocolate (60% cocoa)
– Egg beater
– Medium-sized paper cups
– Cupcake pan
– Spatula, spoon, and fork
Makes: 7 mini cheesecakes
Step 1: Making the Crust
1- Place the cookies in a bowl and crush them with the bottom of a cup until you get a fine powder. You can also use the food processor in this step.
2- Melt the butter in the microwave and add it to the crushed cookies. Mix well.
3- Place paper cups in the holes of the cupcake pan. This recipe will make 7 medium individual cheesecakes.
4- Distribute the cookies mixture evenly in the paper cups, and press into the bottom and up the sides with a spoon. Refrigerate while making the filling.
Step 2: Make the Cheesecake Filling
1- Place the chocolate in a bowl, cover with a plastic wrap, and melt in the microwave in 30 seconds shots. Mix in between to avoid burning the chocolate.
2- In a large bowl, place the cream cheese. Mix with an egg beater for 1-2 minutes until the cream cheese becomes smooth and creamy. Scrape the sides of the bowl with a spatula from time to time and continue mixing.
3- Add the powdered sugar, and continue mixing with the egg beater until well incorporated.
4- Add the heavy cream and vanilla paste. Continue mixing for another 2 minutes.
5- Add the chocolate (which has cooled a bit now) to the cream cheese mixture and mix with a spatula until well incorporated.
Step 3: Final Steps
1- Spread the cream cheese filling over the cookie crust.
2- Refrigerate for 4 hours (or overnight) until the filling is set.
