021 – Kab El Ghazal

Ingredients :

4 cups of flour
1 cup of water
5 tablespoon of butter
1 egg
2 tablespoon of blossom water
Pinch of salt
Ingredients for the Filling
2 1/2 cups of blanched almonds
3/4 cup of sugar
3 tablespoon of butter
1/4 teaspoon of cinnamon
2 tablespoon of blossom water

Directions :

Steps to make the dough:

1- Melt the butter.
2- Mix all the dough ingredients together. It will take 20 minutes of kneading by hand to get an elastic dough; otherwise, you can use a kneading machine (around 10 minutes).
Steps to make the Filling:
1- Roast the almonds for 2 minutes to enhance their flavor.
2- Mix all the filling ingredients togehter in a mixer until you get a smooth almond paste.

Rolling the Kab El Ghazal:

1- Roll a portion of the dough into a very thin later.
2- Put on the dough some almond filling the size and shape of a finger.
3- Cover the almond filling with the lower portion of the dough (see video)
4- Shape the cookie into a crescent.
5- Cut the cookie with a cookie roller.

Baking the Kab El Ghazal:

1- Layer the cookies in a baking pan covered with parshment paper.
2- Put tiny holes in the cookies using a fork.
4- Preheat the oven at 350 degrees.
5- Bake the cookies for 15-20 minutes.

Presentation:

These cookies taste amazing with Moroccan tea.
