218 – Mashed Potatoes Moroccan Style Recipe

Ingredients :

  • 1.5 pounds (650 grams) gold potatoes
  • 3 garlic cloves (peeled)
  • 2 bay leaves
  • 2/3 cup Dannon Oikos plain non-fat Greek yogurt
  • 1 tablespoons finely choppsed cilantro
  • Salt, pepper, ground cumin to taste

Directions :

Step 1: Cooking the Potatoes
1- Pleel and slice the potatoes. Place the potatoes in a large bowl of cold water once peeled so they do not turn brown.
2- Drain the potatoes from the water, then place them in a large pot. Cover with cold water, add salt, the garlic cloves, and bay leaves. Cook on medium-high heat, covered, for around 30 minutes or until the potatoes become soft.

Step 2: Rolling the Truffles
1- Drain the potatoes from the water and place them in a large bowl.
2- Add the greek yogurt and cilantro to the potatos. Mash with a manual potato-masher, fork, or food processor.
3- Season with salt, pepper, and ground cumin to taste. Serve immediately.
