303 – Moroccan Rice Pudding Recipe / وصفة الأرز باللبن المغربية

Ingredients :

  • 1 cup rice (any size of cup)
  • 2 cups of water (same cup used for rice)
  • 2 cups of milk (may need 1 extra cup)
  • 1 small piece of lemon peel
  • 1 cinnamon stick
  • 1/3 cup of sugar (or to taste) – same cup used for the rice
  • 1 teaspoon of orange blossom water (or to taste)
  • 1 tablespoon of butter
  • Ground cinnamon

Directions :

Step 1 – Preparing the Rice:
1- First, wash the rice with water and change the water a couple of times until the water becomes clear. It really makes a difference in the taste when you take a minute to wash the rice.

Step 2 – Cooking the Rice:
1- In a saucepan add the rice and water.
Note: Just remember, for every cup of rice, you use 2 cups of water – whatever the size of your cup is.
2- Add a piece of lemon peel and a cinnamon stick.
3- Cover your saucepan, leave a little opening for the steam to come out, and cook the rice on medium heat. Stir from time to time, so that the rice at the bottom does not burn. And it happens… so be careful!
4- Once the water has evaporated, after around 15 minutes, add the milk – again 2 cups of milk for every cup of rice you use. Cover and continue cooking and of course stirring from time to time.
5- When the milk has evaporated, another 15 minutes or so of cooking, taste your rice… it needs to be really soft, if it’s not, add a little more milk and continue cooking.
6- When your rice is ready add sugar and butter. Mix well.
7- Turn off the heat and finish with orange blossom water.
