476 – KFC Chicken Eggplant Pizzettes / بيتزات الدجاج والباذنجان
- 1 box of KFC crispy chicken strips
- 1 large thick eggplant
- 4 teaspoons olive oil
- Salt and pepper
- 1/4 cup pasta sauce
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon finely chopped cilantro
1- Cut the eggplant crosswise into thick slices. Place them in a baking sheet covered with parchment paper.
2- Brush both sides of each eggplant slice with olive oil. Season with salt and pepper.
3- Bake the eggplant slices in a preheated oven at 200C for 15 minutes or until they become tender. Make sure to turn the eggplant slices once, while baking.
4- Once soft, layer each eggplant slice with 1 tablespoon of pasta sauce, shredded cheese, and KFC crispy chicken strips cut into bite-sized pieces.
5- Bake again for 5 minutes until the cheese melts.
6- Top each eggplant pizzette with chopped cilantro and serve immediately!
