Ingredients :
Harcha dough ingredients:
300 grams (1 3/4 cups) fine semolina
1 teaspoon salt
1 tablespoon white granulated sugar
2 teaspoons baking powder
1 teaspoon dry yeast
2 tablespoons vegetable oil
400 ml water
Shaping ingredients:
Extra fine semolina
Vegetable oil
Directions :
1- In a large bowl, combine all the dough ingredients except water.
2- Mix by hand until all ingredients are well incorporated.
3- Add water, little by little, while mixing.
4- Continue mixing until all the water is completely absorbed. Let the dough rest for 10 minutes before shaping it.
5- Form small balls with the dough and roll each one of them in semolina.
6- Flatten the harcha balls. Place the opening of a cup on the harcha rounds to perfectly shape the edges into a nice circle.
7- On medium heat, warm up a heavy frying pan. Once hot, place the individual harcha galettes on the pan.
8- Cook the first side for 5 minutes then flip the harcha and continue cooking the second side for another 5 minutes, until both sides have a beautiful golden color.
9- Serve immediately, warm, with butter, honey, jam, cheese, or any filling of your choice!
