554- Coconut Ghriba – Gluten Free / غريبة جوز الهند بدون غلوتين
Ghriba or Ghoriba, is a must during special occasions in Morocco, the gluten free version is for ghriba lovers who doesn’t like to miss Eid breakfasts and likes a cookie with their mint tea! It’s texture won’t make you think that it’s any different from the ghriba you grow up eating and you can add any nuts not just almond!
2 large eggs
150 grams (2 cups) dried unsweetened coconut, finely shredded
50 grams (1/4 cup) white granulated sugar
50 grams (1/4 cup) rice flour
50 grams (1/4 cup) millet flour
50 grams (1/4 cup) melted butter
1 teaspoon baking powder (Free Gluten)
Pinch of salt
1- In a large bowl, add the dry ingredients: dried coconut, rice flour, millet flour, baking
powder (Free Gluten), salt, and sugar. Mix until well combined.
2- Add the melted butter and eggs.
3- Continue mixing until all the ingredients are well incorporated into a smooth moist dough.
4- Preheat your oven to 180 °C / 350 °F. To shape the cookies, take some of the coconut
dough, and make balls the size of a walnut. Flatten each ball slightly, dip one side into the
powdered sugar, then place on a baking pan covered with parchment paper. Make sure
to leave space between the cookies as they expand when baking.
5- Bake the cookies for 15 minutes until light golden brown.
6- Once the cookies are done, remove from the oven, and let cool completely before storing.
