554- Coconut Ghriba – Gluten Free / غريبة جوز الهند بدون غلوتين
For 20 to 30 ghriba depending on the shape
2 large eggs
150 grams (2 cups) dried unsweetened coconut, finely shredded
50 grams (1/4 cup) white granulated sugar
50 grams (1/4 cup) rice flour
50 grams (1/4 cup) millet flour
50 grams (1/4 cup) melted butter
1 teaspoon baking powder (Free Gluten)
Pinch of salt
1- In a large bowl, add the dry ingredients: dried coconut, rice flour, millet flour, baking
powder (Free Gluten), salt, and sugar. Mix until well combined.
2- Add the melted butter and eggs.
3- Continue mixing until all the ingredients are well incorporated into a smooth moist dough.
4- Preheat your oven to 180 °C / 350 °F. To shape the cookies, take some of the coconut
dough, and make balls the size of a walnut. Flatten each ball slightly, dip one side into the
powdered sugar, then place on a baking pan covered with parchment paper. Make sure
to leave space between the cookies as they expand when baking.
5- Bake the cookies for 15 minutes until light golden brown.
6- Once the cookies are done, remove from the oven, and let cool completely before storing.
