20-30 single layer cookies
125 grams (1/2 cup) butter
90 grams (1/3 cup) powdered sugar
60 grams (1/4 cup) almond powder
100 grams (1/2 cup) rice flour
50 grams (1/4 cup) millet flour
1 teaspoon baking powder (Free Gluten)
1 teaspoon vanilla sugar
Pinch of salt
1- In a large bowl, place the softened butter, powdered sugar, salt, and vanilla sugar.
2- Mix by hand until all the ingredients are well incorporated.
3- Add almond powder and egg. Mix.
4- Add the rice flour, millet flour, and baking powder (Free Gluten).
5- Continue mixing until you get a smooth texture.
6- Cover the dough with a plastic wrap and let it rest in the fridge for 1 hour.
7- Preheat your oven to 180 °C / 350 °F. On your working surface, sprinkle some rice flour and place the dough on top. Now, sprinkle more rice flour on top and roll out the dough thinly. Keep sprinkling rice flour while rolling the dough so it does not stick.
8- Use a cookie cutter of your choice to shape the dough.
9- Place the cookies in a baking pan covered with parchment paper.
10- You can brush the biscuits with egg yolk and sprinkle them with seeds, or leave them plain.
11- Bake the cookies for about 10-15 minutes until golden brown. Let them cool completely before serving.
