604- Carrots and Red lentils Velouté with Coconut Milk / كريم من الجزر والعدس مع حليب جوز الهند
100 grams red lentils
300 grams carrots
1 medium red onion
1 vegetable stock cube
A pinch of grated nutmeg
600 milliliters water
200 milliliters coconut milk
A drizzle of olive oil
Salt and pepper, to taste
3 sprigs of cilantro
1- Rinse the lentils then drain them. Peel the carrots and onion and cut them roughly.
2- In a pan over medium heat, heat the olive oil. Add onions and carrots and cook for a 5 minutes.
3- Add coral lentils, vegetable stock cube, cilantro and water. Cover the pan and cook for 30 minutes.
4- Add the coconut milk and mix until you get a smooth texture.
5- Sprinkle salt and pepper, and add the pinch of nutmeg. Serve hot.
