688- Veggies Tomato Sauce / صلصة الطماطم مع الخضر
For the sauce:
2 carrots, grated
1 small onion, chopped
1 aubergine, cut to cubes
1 green pepper, cut to cubes
2 tbsp tomato sauce
360 g pizza sauce
250 ml of water
2 tbsp olive oil
Salt and pepper, to taste
For the sauce
1- Heat olive oil in a sauce pan over medium heat. Add onion and cook for 3 minutes while stirring with a spatula.
2- Add carrots, eggplants, green bell pepper, salt, and pepper and continue cooking for 15 minutes until tender.
3- Remove from the heat and place the mixture in a food processor, add tomato sauce, pizza sauce, and water.
4- Mix until you have a smooth texture.
You can use the sauce for quiche, pizza, or pasta, etc.
