876- Whole Wheat Crêpes with Salmon and Leeks / فطائر الكريب بدقيق القمح الكامل بحشوة السلمون و الكراث
6 whole wheat crêpes
200 grams (7 oz) fresh salmon, cut into cubes
4 leeks, finely chopped
3 tablespoons olive oil
1 teaspoon garlic powder
1 tablespoon fresh chopped dill
3 tablespoons lemon juice
1 tablespoon lemon zest
Salt and pepper, to taste
2 tablespoons whole grain mustard
Fresh dill, chopped
1- Heat olive oil In a large pan over medium heat. Add the chopped leeks, garlic powder, salt, and pepper. Cook for 3 minutes stirring from time to time with a wooden spoon until soft.
2- Add the salmon, dill, lemon juice, and continue cooking for 5 minutes stirring constantly until the salmon is done.
3- Remove the pan from the heat, add lemon zest to the salmon, and gently mix with a wooden spoon to combine. Allow to cool.
4- Place one crêpe on a serving plate, spread one teaspoon of whole grain mustard, garnish one side with the salmon filling, and fold the other side on the filling.
5- Garnich the crêpes with fresh dill leaves and lemon zest. Serve immediately with a side salad.
