885- Whole Wheat Batbout Filled with Chicken / بطبوط بدقيق القمح الكامل محشي بالدجاج
15 mini whole wheat batbouts
250 grams (8.8 oz) chicken breast, cut into medium cubes
2 tablespoons freshly chopped parsley
1 teaspoon ground ginger
1/4 teaspoon pepper
2 teaspoons soy sauce
1 teaspoon garlic powder (or grated fresh garlic)
5 tablespoons unsweetened plain yogurt
2 tablespoons olive oil
3 tablespoons whole grain mustard
1 medium tomato, cut into thin slices
5 lettuce leaves, chopped
Step 1: Preparing the chicken filling
1- In a large bowl, add the chicken, parsley, ground ginger, pepper, soy sauce, garlic powder, and yogurt. Mix to combine.
2- Cover the chicken with plastic wrap, place it in the fridge for about 25 minutes and allow to marinate.
3- Heat the olive oil In a large pan over medium heat. Add the chicken mixture and cook for 8 minutes stirring from time to time with a wooden spoon until the chicken is done and becomes golden brown.
Step 2: Assembling the batbout buns
4- Using a sharp knife, open the batbout buns to form a pocket.
5- Spread some mustard in each bun, then add a layer of tomato and lettuce. Add 1 tablespoon of the cooked chicken in each batbout.
6- Serve with a yogurt sauce or any sauce of your choice.
