890- Brownie Muffins / كعكات البراوني
For the brownie muffins:
200 grams (7 oz) sweet potatoes, peeled and cut into cubes
150 grams (5.2 oz) 70% dark chocolate
100 milliliters (1/2 cup) milk
1/2 teaspoon ground cinnamon
2 tablespoons honey
80 grams (3/4 cup) unsweetened coconut flour
1 teaspoon baking powder
3 tablespoons dried unsweetened finely shredded coconut
3 tablespoons chopped walnuts
1- In a saucepan over medium heat, boil water with a pinch of salt. Add the sweet potatoes and cook for 30 minutes or until fork tender.
2- Drain the sweet potatoes from water, place them in a large bowl, press and mash them using a potato masher until you get a puree. Set aside to cool.
3- In another saucepan over medium heat, add the dark chocolate, milk, and heat up until the chocolate is completely melted. Set aside to cool.
4- In a large bowl, add the mashed sweet potatoes, cinnamon, eggs, honey, and the melted chocolate. Whisk until well combined.
5- Add the coconut flour, the baking powder, and continue mixing until a homogeneous and smooth brownie batter is obtained.
6- In a muffin pan, place muffin paper cups and spoon the brownie batter into each paper cup. Top with chopped walnuts before baking.
7- In a preheated oven at 180°C / 356°F, bake the brownie muffins for 15-20 minutes, until they are cooked. Insert a toothpick in the center of a muffin, it should come out dry.
8- Remove the brownie muffins from the oven and allow to cool completely. Garnish with shredded coconut and serve.
