899- Chorba of Oats / شوربة الشوفان و الدجاج
1 small onion, finely chopped
1 large zucchini, grated
1 large carrot, peeled and grated
100 grams (3.5 oz) chicken breast, cut into small cubes
2 tablespoons olive oil
1 rosemary sprig
1 tablespoon tomato paste
2 tablespoons finely chopped parsley
Salt and pepper, to taste
1/4 teaspoon ground ginger
1/2 teaspoon ground turmeric
100 grams (1 cup) rolled oats
1 liter (5 cups) water
Fresh parsley leaves for decoration
1- Heat the olive oil in a large pot over medium heat. Add the onion and rosemary and cook for 2 minutes.
2- Add the chicken cubes, zucchini, carrots, tomato paste, parsley, ginger, turmeric, salt, and pepper. Continue cooking for 8 minutes while occasionally stirring until the chicken is half cooked.
3- Add the water then cover the pot and cook all the ingredients on high-heat for 10 minutes.
4- Add the oats to the chorba mixture, and mix with a ladle until all is well combined.
5- Cover the pot once again and continue cooking the chorba on medium-high heat, stirring occasionally, for around 10 minutes or until the oats are tender.
6- Garnish the chorba with fresh parsley leaves and serve hot with toasted whole wheat bread.
