900- Healthy Sellou / سلو صحي
125 grams (1 cup) whole wheat flour
100 grams (1/2 cup) sesame seeds
200 grams (1 2/5 cups) whole raw almond
60 grams (1/2 cup) flax seeds
1 tablespoon ground green anise, roasted
1/2 teaspoon ground cinnamon
3 tablespoons olive oil
3 tablespoons honey
1 pinch of salt
3 tablespoons roasted almond flakes for decoration
Step 1: Preparing the ingredients
1- In a large pan over medium-low heat, add the whole wheat flour and spread it. Cook the whole wheat flour for 20 minutes, stirring every 5 minutes with a wooden spoon until it is evenly colored to medium golden brown (do not burn.) Set aside.
2- In the same pan over medium heat, add the sesame seeds and toast them for 10 minutes, stirring constantly until they are golden brown. Set aside to cool.
3- In the same pan over medium heat, add the flax seeds and toast them for 10 minutes, stirring constantly until crunchy. Set aside to cool.
4- Place the almonds on a baking sheet covered with parchment paper and roast them in a preheated oven at 180°C / 356°F for 10 minutes until they become golden. Set aside until they cool completely before using.
5- Place the 1/2 of sesame seeds in a food processor and blend them until a smooth paste is formed. Set aside.
6- In the same food processor, place the 1/2 of roasted almonds. Add the flax seeds and blend to a rough consistency. Set aside.
7- Place the remaining half of the almonds in the food processor and blend until creamy. Set aside.
Step 2: Mixing the ingredients
8- In a large bowl, add the whole wheat flour, chopped almonds, the sesame seeds, flax seeds, sesame paste, almond butter, ground green anise, cinnamon, honey, sesame oil, and salt, then mix to combine.
9- Knead the healthy sellou mixture with your hands for a few minutes to make sure that all the ingredients are well mixed.
10- Place the healthy sellou in a serving dish and garnish with the toasted almond flakes. Serve with tea.
