250g (1 1/2 cups) all-purpose flour
100g (1/4 cup) butter, at room temperature
3 tablespoons olive oil
50g (1/4 cup) Edam cheese, grated
2 triangular cheese portions
1 teaspoon harissa or tabasco sauce
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon paprika
1 teaspoon dried oregano
For decoration (optional)
20g (1 ounce) sesame seeds
20g (1 ounce) pumpkin seeds
20g (1 ounce) flax seeds
20g (1 ounce) sunflower seeds
20g (1 ounce) almond flakes
20g (1/8 cup) Edam cheese grated
1- In a bowl, beat the butter, olive oil, egg, triangular cheese and Edam cheese using an electric egg beater for 5 minutes until the butter becomes creamy.
2- Sift the flour into the bowl and mix with a spatula until well combined.
3- Add the harissa, garlic powder, salt, paprika, and dried oregano and mix until a dough forms. Cover with plastic wrap and refrigerate for 30 minutes.
4- Place the chilled dough between two pieces of parchment paper and flatten it to a 5mm (1/8in) thickness.
5- Using a cookie cutter in the shape of your choice, cut the dough and place the cookies on a parchment-lined baking sheet. Decorate with your choice of toppings, then bake in a preheated oven to 160°C / 320°F for 15 minutes. Set aside to fully cool before serving.
