947- Pumpkin Zaalouk (Moroccan dip) / زعلوك بالقرع
1 medium bowl
500g (1 pound) pumpkin, peeled and diced
2 tablespoons olive oil
2 garlic cloves, grated
1 tablespoon tomato paste
1/2 teaspoon Harissa
1/4 teaspoon salt
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
2 tablespoons chopped parsley and coriander
1- Add the pumpkin in a steamer basket placed over a pot of boiling water. Sprinkle the pumpking with a pinch of salt, then steam for 15 minutes or until the pumpkin is soft.
2- Heat up the olive oil in a pan over medium heat. Add the garlic and cook for 1 minute.
3- Add the pumpkin to the pan and mash it using a wooden spoon.
4- Add the tomato paste, Harissa, the spices, and the herbs, then continue cooking for 10 minutes while stirring.
5- Once all the water has evaporated and the zaalouk has thickened, remove from the heat and set it aside to cool. Serve with a sprinkling of parsley and pumpkin seeds, then enjoy!
