276 – Fig and Almond Clafoutis Recipe / كلافوتيس التين واللوز

Ingredients :

 

  • 10 fresh figs (or another soft fruit such as apricots, peaches, etc.)
  • 4 large eggs
  • 1/2 cup (100 grams) white granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30 grams) of butter (melted)
  • 1/3 cup and 2 tbsp (50 grams) all-purpose white flour
  • 1/3 cup (50 grams) almond powder
  • A pinch of salt
  • 2 cups (40 cl) milk
  • A piece of butter (for the baking pans)
  • Sliced raw almonds and sugar (to decorate)

Directions :

 

Step 1: Preparing the Batter.
1- The first step is to mix the eggs with the sugar. In a large bowl, add the eggs and the sugar, and beat them for 1-2 minutes, until they are mixed.
2- Add the vanilla extract and mix.
3- Add the melted butter and mix.
4- Sift the flour and add it to the egg mixture. Also add the almond powder (you can buy it or you can just grind blanch almonds).
5- Using a spatula mix in all the ingredients until well incorporated.
6- Do not forget to add a pinch of salt! Mix.
7- Add the milk and mix well. The batter will look like a smooth crepe butter. This is what we want as the clafoutis is a very light dessert.
8- Quarter the fresh figs.
Step 2: Putting the Clafoutis Together
1- To put the clafoutis together you can either use casuelas (earthware individual plates), creme brulee plates, or just a regular round baking pan.
2- butter your pan(s).
3- Place the figs (be generous!) in your baking pan.
4- Gently pour the batter on top and around the figs until the baking pan if filled.
5- Add the raw sliced almonds on top. Finally, sprinkle some sugar on top.
Step 3: Baking the Clafouti
1- Preheat your oven to 400 F (200C) and bake for around 40-45 minutes (depending on your oven and depending on the size of your baking pan). The clafoutis is ready when the top has a beautiful golden brown color and the batter is set.
2- Let the clafoutis cool before serving.
Serve warm with vanilla ice cream!
