
321 – Meat & Mushrooms Spring Rolls Recipe / لفائف الفطر و اللحم

Very easy
Ingredients :
- 300 grams ground meat
- 250 grams fresh (or canned) mushrooms
- Meat spices: 1 teaspoon paprika, 1/2 teaspoon cumin, 1/2 teaspoon salt,
- 1/4 teaspoon pepper
- Salt and pepper to taste
- Grated cheese
- 1 egg lightly beaten (to close the springrolls)
- Butter
- Vegetable oil for frying
Directions :
Step 1: Cooking the Ingredients
1- First, let’s prepare the filling items.
On Medium heat, melt some butter in a pan, add the mushrooms, a little bit of water, salt, and pepper. Stir the mushrooms and let them cook for 10 minutes or until they become soft. Keep in a bowl.
2- Now, in the same pan, melt some butter still on medium heat. Add the ground beef, and the spices: we have salt, pepper, paprika, and cumin! Stir the meat so all the spiced are mixed. Cook for around 10 minutes. The meat will become brown, it will release juices… hmmmm, the smell is just amazing! Once you see that the juices are reducing, remove the meat before it dries out.
Step 2: Rolling the Cigars (Briwat)
1- Now, let’s get rolling!
Here is my warka – it’s home made, just check my video on how to make it yourself!
Since my warka is very thin, I am using two sheets superposed.
2- Very important – let the meat and mushrooms cool down before using them! OK?
So put some of the meat in the edge of the warka closest to you. Add some mushrooms, and grated cheese
3- Roll the edge of the warka over the filling, fold both sides of the warka to the center, then roll the edge that contains the filling as if you were rolling a carpet.
4- Brush the edge with the egg… finish rolling and VOILA. It’s ready!
Step 3: Frying the Springrolls!
1- On medium heat, heat some vegetable oil in a frying pan
2- Once hot, place the spring rolls in the oil. Fry for a few minutes from all sides, until they get a beautiful golden brown color.
3- Once ready, place the spring rolls in paper towel to absorb excess oil.
And that’s it… serve immediately, when they are hot, and enjoy these crunchy, cheesy, meaty spring rolls… YUMMMY! Bon appetite!
