002 – Moroccan Salad (Taktouka)
1 green pepper
1 large onion
2 teaspoons of minced garlic
1 teaspoon of pepper (or to taste)
2 teaspoons of salt (or to taste)
1 teaspoon of paprika
2 tablespoons of olive oil
1/2 cup of water
1- Dice the onion, tomatoes and green pepper.
2- On medium heat, in a cooking pan add the olive oil, onions, garlic and all the spices.
3- Stir the onions for 5 minutes.
4- Cover the pan and let the onions cook for another 5 minutes. During this time check on the onions from time to time to avoid burning them.
5- Add the tomatoes to the pan and stir with the onions.
6- Cover the pan for another 10 minutes and let the onions and tomatoes cook.
7- Add the green pepper to the pan, stir and let it cook for 20 minutes. During this time keep stirring from time to time to avoid burning the vegetables.
8- The Taktouka is ready when the mixture is dry and the pepper is cooked.
Note: If the mixture is dry but the pepper is not cooked, add some water and let it cook longer.
