Juice of half a lemon
1 teaspoon of olive oil
300 ml of water (depending on desired consistency)
1- Brush the surface of the beetroot with a little bit of olive oil, cover it with aluminum foil and bake for about 40 minutes in the oven at 356 °F (180° C) until tender.
2- After taking out of the oven, let it cool a little bit, then remove the skin and cut into pieces. Let it cool completely.
3- Cut the zucchini into pieces and pit the dates.
4- Place beetroot, zucchini, dates, almonds, lemon juice and 50 ml of water in a blender.
5- Mix until you get a juice without lumps.
6- Adjust the consistency by gradually adding the remaining water.
