568- Chocolate dipped cookies – Gluten Free / الكوكيز المغطاة بالشوكولاتة – خالية من الغلوتين

Ingredients

100 grams butter, at room temperature
75 grams white granulated sugar
Pinch of salt
1 egg
100 grams rice flour
75 grams almond powder
65 grams corn starch

Directions

1- In a large bowl, place the butter, sugar, and salt. Mix by hand, or using a spatula, until you get a smooth texture.


2- Add the egg.


3- Continue mixing until you get an homogenous consistency.
4- Add the rice flour, almond powder, and corn starch.


5- Mix until it’s all combined.


6- Place the dough in a pipping bag with a medium piping tip. On baking pan covered with parchement paper, pip flang of 7 cm of length.


7- Bake in a preheated oven at 180C / 350 F for about 15 minutes untill the cookies are golden brown.

8- Let the cookies cool down, and meanwhile, prepare your melted chocolate.
9- Dip third of the cookies in the melted chocolated and place them on a parchement paper.


10- Reserve in the fridge until the chocolate is firm.
