572- Turnip Salad / سلطة اللفت
2 medium turnips
½ lemon confit
1 clove of garlic
1 teaspoon of lemon juice
1 tablespoon of olive oil
¼ teaspoon of pepper
¼ teaspoon of salt
¼ teaspoon of ground cumin
1 tablespoon of chopped parsley
1- Peel the turnips and cut them into small cubes. Remove the pulp from the preserved lemon and cut the bark into small cubes. Chop the garlic clove.
2- In a saucepan, place the turnips and cover with boiling water and cook over medium heat for about 15 minutes, until the turnips are tender and the water has evaporated.
3- Add the preserved lemon, garlic, lemon juice, olive oil, cumin, salt and pepper, mix and continue cooking for 3 minutes.
4- Add the chopped parsley, mix and remove from heat.
Let it cool and serve it warm.
