597- Cake with Dates / كعكة لينة مع التمر
200 grams (7 oz) date paste
100 grams (1/2 cup) brown sugar
A pinch of salt
75 grams (5 tablespoons) melted butter
175 (1 1/3 cups) grams all-purpose flour
1 teaspoon baking soda
A pinch of ground cinnamon
100 grams of dark or milk chocolate, melted
A handful of sliced almonds, lightly toasted
1- Preheat your oven to 180°C. In a large bowl, whisk the eggs with the sugar and salt until you get a foamy mixture, then add the melted butter and mix.
2– Sift the flour and baking soda and add them to the bowl and mix.
3– Add the date paste and mix until you get an homogeneous mixture.
4- In a square or rectangular mold lined with parchment paper, pour the dough and smooth the top with a spatula.
5- Bake for 30 minutes until the cake is cooked. Remove from the oven and allow it to cool on a rack.
6– Spread the melted chocolate over the cake and decorate with sliced almonds.
For a homemade date paste: pit the dates, steam them for 10 minutes then mix them in an electric mixer until you have a smooth paste.
