617- Baked Tomato Egg Cups / كؤوس الطماطم بالبيض
2 large tomatoes
1 tablespoon chopped scallions
Salt and pepper, to taste
Fresh herbs (parsley, cilantro, or basil), chopped
1- Preheat your oven to 180°C (350°F).
2- Slice off the top of the tomato, and using a spoon, empty the inside of the tomato without breaking its shape.
3- Brush a muffin tin with olive oil. Place one tomato in each muffin hole and brush the inside of the tomato with olive oil as well.
4- Season the tomatoes with salt and pepper and garnish with the chopped scallions.
5- Crack the eggs in two separate bowls, then pour each egg in the hole of each tomato. Season with salt and pepper and bake for about 25 minutes until the eggs are set.
6- Garnish with fresh herbs and serve immediately.
