656- Vegetables Chorba / شوربة بالخضرة
2 onions, finely chopped
3 carrots, cut into small cubes
3 zucchinis, cut into small cubes
2 turnips, cut into small cubes
2 potatoes, cut into small cubes
2 celery stalks, cut into small cubes
2 tomatoes, grated
1 teaspoon tomato paste
1 bunch of parsley
50 grams medium vermicelli
50 grams chickpeas, soaked in water overnight
3 tablespoons olive oil
1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1/4 teaspoon turmeric
2 liters water
1- In a large saucepan over medium heat, heat the olive oil, then add the onions, salt and pepper and cook for 3 minutes.
2- Add the carrots, zucchini, turnips, potatoes, celery, chickpeas, and turmeric and cook for 2 minutes while stirring with a wooden spoon.
3- Add the tomatoes, the tomato paste, and the bunch of parsley and cover with water.
4- Cover the pan and cook for 20 minutes.
5- Remove the bunch of parsley then add the vermicelli to the pan and mix.
6- Cover the pot again and continue cooking for 5 minutes until vermicelli and vegetables are tender.
