698- Ginger Ale / مشروب الزنجبيل
150 grams / 5.2 oz. fresh ginger, peeled and chopped
150 grams / 3/4 cup white granulated sugar
Zests of 3 lemons
Juice of 1 lemon
1 litre / 4 cups water
2 litres / 8 cups sparkling water, for serving
1- In a saucepan, place the white granulated sugar, ginger, and lemon zest. Mix together.
2- Add the water and lemon juice, mix, and place the saucepan over medium heat.
3- Bring the mixture to a boil while stirring from time to time, and let it cook uncovered for about 10 minutes until you have a syrupy texture.
4- Remove from the heat and let the syrup cools down for 10 minutes.
5- Place a strainer over a bowl and strain the syrup. Keep only the syrup and discard ginger and lemon zest.
6- Let the ginger syrup cools down completely before pouring in a jar and reserving in the fridge.
7- When serving, mix 50 ml / 1/5 cup of syrup with 200 ml / 4/5 cup of sparkling water.
