745- Chocolate Sweet Potatoes Muffins / مافنز الشوكولاتة والبطاطس الحلوة
140 grams sweet potato, peeled and cut into medium cubes
120 milliliters (1/2 cup) whole milk
60 milliliters (1/4 cup) Colza oil Carrefour
1 medium egg
80 grams (3/4 cup) almond powder
30 grams (3 tablespoons) light brown sugar
10 grams (1 tablespoon) all-purpose white flour
14 grams (2 tablespoons) unsweetened cocoa powder
7 grams (1 teaspoon) baking powder
1 teaspoon vanilla extract
1- In a saucepan over medium heat, boil some water with a pinch of salt, and cook the sweet potatoes in salted bowling water for 30 minutes. The sweet potatoes should be very well cooked and tender when tested with a fork.
2- Sieve the sweet potatoes from water, place them in a large bowl, press and mash them using a potato masher until you get a puree.
3- Add little by little milk to the sweet potato puree as needed, mix well using a whisk between each addition until well incorporated. The goal is to have a silky and soft texture.
4- Add Carrefour Colza oil, 1 egg, light brown sugar, and mix well using a whisk until it gets a smooth mixture.
5- Add flour, almond powder, cocoa powder, baking powder, and vanilla extract. Mix well until well incorporated.
6- In a muffin pan, place muffin paper cups and spoon the preparation into each paper.
7- In a preheated oven at 180 °C, bake the muffins for 20 minutes, until they are cooked. Insert a toothpick in the center of a muffin, it should come out dry.
8- Remove from the oven and allow to cool completely before serving.
